Cox Orange Pippin apples are hand-picked, pressed, slow fermented and aged in stainless steel to retain the true character of this legendary apple. Not cutting any corners, each bottle was aged "en tirage" for more than 14 months, and then racked, riddled and disgorged in the traditional champagne method. Dry,  complex, with a subtle tannic finish. Only 42 cases made, we have two.
